Cheese Balls to kickstart your week!

This recipe can be used to make plain or shrimp or fish fritters.

Ingredients

  • 500g bessan powder (chickpea flour)
  • 1 pinch of baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon cumin
  • ¼ teaspoon pepper
  • 1 large onion finely chopped
  • 4 chiles, chopped or 1 teaspoon cayenne pepper powder
  • ¼ cup chopped chives
  • 1 cup mixed cilantro and chopped mint
  • 1 egg
  • ½ teaspoon of salt
  • 250ml water
  • A few pieces of cheese cut into cubes
  • Frying oil

Preparation

1. Pour bessan, salt, pepper, cumin, baking soda and baking powder into a large bowl and mix everything together.

2. Add the egg and work the mixture until it becomes like breadcrumbs.

3. Pour the water gradually until you obtain a very soft and homogeneous paste.

4. Mix vigorously, adding water if necessary, then leave for 10 minutes.

5. Pour cilantro, mint, peppers, onions and chopped chives into the batter and mix.

6. Pour the pieces of cheese into your dough.

7. Using a tablespoon take a small amount of your mixed batter and carefully drop it into your frying pan.

8. Brown each side for about 2 minutes.
