Ingredients
- 4 eggs
- 2 tbsp carrots, chopped
- 2 tbsp spring onions, chopped
- 2 tbsp oil
- Salt and pepper to taste
Instructions
- Firstly chop the carrot and spring onions very finely and collect them in a bowl.
- Whisk the eggs. Add salt, pepper, chopped veggies and whisk again until the mixture is fluffy.
- Now use a brush to grease the pan properly with oil.
- Pour 1/4 of the egg mixture into the pan and spread it evenly. Let it set for a minute.
- While the upper layer is still wet, fold on side halfway and pull the omelette towards the rolled side in such a way that some space is created in the pan for the remaining mixture.
- Now in the space created, pour half of the remaining mixture and let it club together with the omelette.
- Now again roll it a bit and create some more space in the pan.
- Lastly, pour the remaining mixture and let it cook. Again fold it to prepare a thick omelette log.
- Once it is cooked, chop the omelette into pieces and serve.
