Ingredients
- 4-5 tbsp Sunny Chop Suey
- 200g chicken breast, cut into small strips
- 100g Meefoon noodles
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 1 bell pepper (any color), thinly sliced
- 1 carrot, julienned
- 1 clove garlic, minced
- Lettuce leaves, washed and dried (to use as cups)
- Salt and pepper, to taste
Instructions
Prepare the Meefoon noodles according to the package instructions. Drain and set aside.
In a large pan or wok, heat the vegetable oil over medium-high heat.
Add the chicken strips, season with a bit of salt and pepper, and cook until fully cooked, about 5-7 minutes. Remove the chicken from the pan and set
aside.
In the same pan, add a bit more oil if needed and sauté the onion, garlic, bell pepper, and carrot until they are tender but still crisp, about 4-5 minutes.
Add the Sunny Chop Suey to the pan and stir well to combine with the vegetables.
Add the cooked chicken and Meefoon noodles to the mix. Stir everything together until well combined and heated through. Adjust the seasoning with salt, and pepper if needed.
Lay out the lettuce leaves on a plate.
Spoon the chopsuey, chicken, and meefoon mixture into the center of each lettuce leaf.
Serve immediately and enjoy the refreshing crunch of the lettuce with the savory filling.
