Ingredients

  • 200g flour
  • 1 teaspoon of salt
  • 115g cold butter
  • 5-6 tbsp cold water
  • 1 egg for brushing
  • 3-4 tbsp powdered sugar
  • Crème fraîche
  • 1 Sunny Hi-fruit jam strawberry

Preparation

1. First you mix flour, salt and powdered sugar.

2. Cut the cold butter into small cubes, add to the flour mixture and knead with your hands to form a crumbly dough mixture.

3. Pour the cold water over it and quickly process it into a pie dough.

4. Now wrap the dough in cling film and store in the fridge for at least half an hour.

5. Preheat the oven to 190°C and line a baking tray with baking paper.

6. Whisk an egg for brushing.

7. After half an hour, roll out the dough thinly and cut rectangles out of it.

8. Each rectangle must have a pair with the heart cut out.

9. Fill the rectangles without the heart cut out with a teaspoon of crème frache and then a tablespoon of the Sunny strawberry Hi fruit jam on top of it.

10. Now, place the pair of the rectangle with the heart cut out on it and press in the edges.

11. Brush the love letter pies with the beaten egg and bake in the oven for about 20 minutes.
