If you’re looking for a healthy yet delicious and quick meal – This cauliflower curry is the answer!

Ingredients

  • 250 g Cauliflowers
  • 2 tbsp oil
  • ¼ tsp mustard seeds (Optional)
  • ½ tsp cumin seeds
  • 1 sprig curry leaves
  • 1 ¼ cup onions, chopped
  • 1 green chilli
  • 1 tbsp ginger garlic, chopped
  • ¾ – 1 cup tomato pureed
  • 1 tsp salt
  • ¼ tsp turmeric
  • ¾ tsp chilli powder
  • 1 tsp garam masala
  • ½ tsp coriander powder
  • 1 cup coconut milk/ water

Instructions

  • Clean cauliflower and chop to desired size.
  • Heat oil in a pan. Add mustard and cumin. When they sizzle, add in curry leaves and fry for 30 secs
  • Add onions and green chilli. Saute until golden
  • Stir in ginger garlic and sauté for about 50 seconds
  • Add tomatoes and salt. Let cook until the tomatoes turn soft and mushy
  • Add turmeric, red chilli powder, garam masala and coriander powder. Let cook until the masala smells aromatic
  • Add cauliflower and cook for 2 mins
  • Pour 1 cup coconut milk/water and mix. Let cook until cauliflower is tender but not mushy. (Add more coconut milk/water if needed)
  • Garnish with coriander leaves.
