DELICIOUS AND LIGHT COOKIES – Nankhatai is a popular and traditional Indian shortbread cookie made with super easy to find ingredients. It can also be prepared in a jiff!

Ingredients

  • 130 g Plain Flour
  • 60 g Besan
  • 30 g Semolina
  • 80 g Sugar
  • 1 pinch salt
  • 1 pinch cardamom powder
  • 115 g Ghee
  • Almonds/ Pistachio for decoration

Instructions

  1. Preheat your oven at 180 C or 350 F for at least 15 mins
  2. Add plain flour, besan and semolina to a mixing bowl
  3. Add cardamom powder and sugar
  4. Mix all of them well together. Ensure that all ingredients are well combined 
  5. Add ghee and mix well to make a dough
  6. The nankhatai dough should not be dry or crumbly but must bind well together. Do not knead it just bring the flour together with the help of ghee
  7. Divide the mixture t0 12 portions and roll to smooth balls. If the mixture is dry and crumbly it means you need more ghee – Just add a tsp of it and mix
  8. Flatten the balls and place them on a tray. You can garnish the nankhatai with some chopped almonds
  9. Bake them at 180 C or 350 F for 10 mins. When done the nankhatai will be golden and almost dry on the top
  10. Remove from the oven and let cool completely.
