Ingredients

  • 4–5 sausages (smoked or fresh)
  • 1 tbsp oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 small piece of ginger (optional)
  • 1 bottle Sunny Rougaille Sauce
  • 1–2 green chilies (optional)
  • Salt & pepper to taste
  • Thyme or coriander for garnish

Instructions

  1. Boil the sausages for 10 minutes. Slice into rounds and set aside.
  2. In a pan, heat oil and sauté onion, garlic, and ginger until soft.
  3. Add the sliced sausages and lightly fry for 3–5 minutes.
  4. Pour in the Sunny Rougaille Sauce and add chilies if using.
  5. Simmer on low heat for 10–15 minutes, stirring occasionally.
  6. Adjust seasoning and garnish with herbs.
  7. Serve hot with rice, farata, or bread.
