Ingredients

  • 1 can tuna in water, drained
  • 2 medium tomatoes, chopped (or 1/2 can crushed tomatoes)
  • 1/2 small onion, chopped
  • 1 clove garlic, minced
  • 2cm of ginger, grated
  • 1 small chili, chopped (optional)
  • 1/4 tsp turmeric powder
  • 1/4 tsp cumin powder
  • 1/4 tsp dried thyme
  • 1 tbsp vegetable oil
  • Fresh coriander, chopped
  • Salt and pepper to taste

Preparation

  1. Heat 1 tablespoon of vegetable oil in a pan. Add 1/2 a small chopped onion and sauté until translucent.
  2. Add 1 minced clove of garlic, 1/2 inch of grated ginger, and a small chopped chili (if desired), and cook for about one minute until fragrant.
  3. Add 2 medium chopped tomatoes (or 1/2 a can of crushed tomatoes), 1/4 teaspoon of turmeric powder, 1/4 teaspoon of cumin powder, 1/4 teaspoon of dried thyme, salt, and pepper to taste.
  4. Simmer the tomato sauce over medium-low heat until it thickens slightly. Gently add 1 drained 5-ounce can of tuna to the sauce and stir it in. Let it simmer for about five minutes, allowing the tuna to cook through and the flavors to meld.
  5. Finally, garnish with fresh chopped coriander before serving.
