Ingredients
- 1 can tuna in water, drained
- 2 medium tomatoes, chopped (or 1/2 can crushed tomatoes)
- 1/2 small onion, chopped
- 1 clove garlic, minced
- 2cm of ginger, grated
- 1 small chili, chopped (optional)
- 1/4 tsp turmeric powder
- 1/4 tsp cumin powder
- 1/4 tsp dried thyme
- 1 tbsp vegetable oil
- Fresh coriander, chopped
- Salt and pepper to taste
Preparation
- Heat 1 tablespoon of vegetable oil in a pan. Add 1/2 a small chopped onion and sauté until translucent.
- Add 1 minced clove of garlic, 1/2 inch of grated ginger, and a small chopped chili (if desired), and cook for about one minute until fragrant.
- Add 2 medium chopped tomatoes (or 1/2 a can of crushed tomatoes), 1/4 teaspoon of turmeric powder, 1/4 teaspoon of cumin powder, 1/4 teaspoon of dried thyme, salt, and pepper to taste.
- Simmer the tomato sauce over medium-low heat until it thickens slightly. Gently add 1 drained 5-ounce can of tuna to the sauce and stir it in. Let it simmer for about five minutes, allowing the tuna to cook through and the flavors to meld.
- Finally, garnish with fresh chopped coriander before serving.
