- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 cup unsalted butter (room temperature)
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1/4 cup Sunny Strawberry Fruit Spread
- A pinch of salt
- Powdered sugar (optional, for dusting)
Instructions
Preheat the oven to 170°C (340°F).
In a large bowl, mix the butter and sugar until light and creamy.
Add the egg yolk and vanilla extract, mixing well.
Gradually add the flour and salt, combining until the dough forms.
Roll the dough into a ball, wrap it in cling film, and refrigerate for about 30 minutes.
Once chilled, roll out the dough on a floured surface to about 1/4 inch thickness.
Cut out cookie shapes using a round or heart-shaped cookie cutter. Make a smaller cut in half of the cookies for the jam to peek through.
Place the cookies on a baking tray lined with parchment paper and bake for 10-12 minutes or until lightly golden.
Let the cookies cool completely before spreading a small amount of strawberry jam on the full cookies and topping them with the cut-out ones to create a sandwich.
Dust with powdered sugar for a decorative touch.
