Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 zucchini, diced
- 1 potato, cubed
- 1/2 cup sweetcorn or peas
- 1 bottle Sunny Pasta Sauce
- 3 cups water or vegetable broth
- Salt & pepper to taste
- Fresh herbs (parsley or thyme)
Instructions
- Heat oil in a large pot. Sauté onion and garlic until fragrant.
- Add carrot, zucchini, potato, and other veggies. Stir well.
- Pour in Sunny Pasta Sauce and mix to coat the vegetables.
- Add water or broth, bring to a boil, then simmer for 15–20 minutes.
- Season with salt, pepper, and herbs.
- Serve warm with bread or croutons.
Tip: Blend half the soup for a creamy texture or add cooked pasta for a hearty version!
