Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 potato, cubed
  • 1/2 cup sweetcorn or peas
  • 1 bottle Sunny Pasta Sauce
  • 3 cups water or vegetable broth
  • Salt & pepper to taste
  • Fresh herbs (parsley or thyme)

Instructions

  1. Heat oil in a large pot. Sauté onion and garlic until fragrant.
  2. Add carrot, zucchini, potato, and other veggies. Stir well.
  3. Pour in Sunny Pasta Sauce and mix to coat the vegetables.
  4. Add water or broth, bring to a boil, then simmer for 15–20 minutes.
  5. Season with salt, pepper, and herbs.
  6. Serve warm with bread or croutons.

Tip: Blend half the soup for a creamy texture or add cooked pasta for a hearty version!
