Ingredients
- ½ canned chickpeas
- ½ canned red kidney beans
- ½ canned white kidney beans
- ½ canned butter beans
- ½ cup chopped red onion
- ½ cup finely chopped diced bell pepper
- ½ cup finely diced cucumber
- ¼ cup chopped fresh coriander
- ¼ cup olive oil
- 1 Lemon juice
- 1 tsp mustard
- Salt and pepper
Preparation
1. Making the mixed beans salad, drain all the canned beans and rinse with water. Set aside for the beans to dry.
2. Chop all the veggies into small pieces.
3. Combine the beans and the veggies in a bowl, add the dressing and mix well.
4. Garnish with chopped coriander.
