An absolute classic dish in every mauritian household “Rougaille saucisse”.

I’m sure almost all of us have eaten it once but for those who have not yet tasted this delicacy, here’s a quick recipe.


  • Sausages
  • Onions
  • Sunny Rougaille (piment)
  • Paprika
  • Turmeric
  • Salt
  • Ginger paste
  • Oil
  • Spring onions

1. Chop the onion and slice the sausages.
2. Fry the onion and sausage.
3. Stir fry the red sauce with paprika, turmeric, salt and ginger for a few minutes
4. Add in the onion and sausages and cook it for a few minutes more. Sprinkle some green onions.

And tada! Your dish is ready to be eaten.

Serve it up with rice, fried potato, green leaves and “pima cari”.
